So, I promised to put up my Wacky Cake recipe today, but for once in about 4 years…I’m out of cocoa! Good timing though, as I just happened to be making a triple batch of wacky (banana cup)cakes for some upcoming birthdays. This recipe works for a 9×13, 2 rounds, or 2-3 dozen cupcakes depending how tall you want them.
Ingredients:
- 3 cups flour
- 1 ½ cups sugar
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tbsp. vinegar
- 2 tsp. vanilla
- ⅔ cup olive oil
- 2 cups warm water
- 2 bananas, mashed
Directions:
1. Preheat oven to 350F. Grease a 9 x 13 inch pan (or prepare your cupcake liners).
2. Mix dry ingredients (sugar, flour, salt, baking soda) in a medium bowl.
3. Add wet ingredients (vanilla, vinegar, oil, bananas, and water).
4. Mix carefully and gently until just combined.
5. Do not overmix! (Pour into the pan and bake right away as the vinegar and baking soda reaction is immediate!)
6. Bake cake for 25 minutes, (or cupcakes 15-20, depending on how full) or until a toothpick comes out clean.
Vita-Mix Directions:
1. Preheat oven to 350F. Grease a 9 x 13 inch pan (or prepare your cupcake liners).
2. Place flour, baking soda, salt, and sugar into the Vita-Mix container and secure lid.
3. Turn machine on Variable 1 to High, and blend for 5 seconds.
4. Remove lid plug, and drop in banana chunks. Pour vinegar, oil, vanilla and water through the lid plug opening. Replace lid plug.
5. Select High. Pulse 8 times or just until mixed. You may need to mix in the last bit of flour with a rubber spatula as you pour it in the pan.
6. Bake cake for 25 minutes, (or cupcakes 15-20, depending on how full) or until a toothpick comes out clean.
